The recipe I was most looking forward to was a Coffee Smoothie! I’ve never tried to formulate a low carb blended ice drink at a coffee shop because I was always afraid of what they put in those things. I’ve tried making a Coffee Smoothie before with my old blender but I always was left with chunks of ice or a blended mess that’s half liquid. I really threw everything but the kitchen sink at this one but luckily other than the cream its all near zero calories. I used some Torani Sugar Free Syrups for both the sweetening and the flavoring for this smoothie. I actually used two different types of coffee.  I did some double strength coffee ice cubes and some regular cold coffee.Coffee Smoothie Before Mixing

Start by layering the ingredients into the Vitamix. You want the liquids to go on the bottom, then the powders or semi solids followed by the ice.  The liquids make it so that when the blending starts there isn’t an air gap and its more likely to blend. I’ve found that you generally you want an equal portion of liquid to ice for the recipe to blend well.Coffee Smoothie in Vitamix

  • 1 Oz Torani Sugar Free Chocolate Syrup

  • 2 Tbsp Unsweetened Cocoa
  • 16 Oz by weight Ice (Cold ice or frozen coffee, I used 6 Oz Coffee Cubes and 10 Oz Ice Cubes)
Instructions
  1. Add the liquids to the blender, then the powder and then the ice
  2. Use the smoothie setting on the Vitamix with the tamper attachment to push the mix towards the blades

You know those Pinterest fails where the outcome never looks like the photo? Well that’s how my last blender caught on fire while my wife was making some frozen two ingredient ice cream amalgamation. I was able to fix the blender but it never really was the same.  So for Christmas my wife got me the blender I always wanted, the Vitamix Pro 750!! First up on my list to make is an Avocado shake that my sister raves about.  I’ve tried it before with my old blender but it always had big blocks of ice and didn’t ever fully mix.  I decided to revisit it with the Vitamix and it was awesome!

Look for more Vitamix Recipes as I experiment with this bad boy over the next few months. I also plan on starting a low carb smoothie series to cover all the keto options out there. Supposedly you can make all sorts of crazy nut butters and soups with this thing as well. If you have any good suggestions or recipes for me sound off in the comments!

Avocado Smoothie IngredientsHere’s the Vitamix with all the ingredients you’re going to use. The original recipe had all heavy cream but it was just way too many calories so I split it up into half Almond Milk and half heavy whipping cream.  You can use any sweetener but I prefer liquid EZ-sweetz since its concentrated, liquid and easy to use.Avocado Smoothie AssemblyIn an effort to reduce the number of pictures for each recipe, I tried entering the 20th century with a GIF! In general with blending, you want to add the liquids first, then the solids, followed by the ice.  The liquids reduce the chance of an air gap and help the blender mix the ingredients effectively.  Start with the almond milk, then the heavy cream, EZ-Sweetz, an avocado and then the ice!Avocado Smoothie Ingredients on Vitamix

Here’s the bad boy ready to rip!  I started with the variable section of the mixer but ended up using the smoothie setting.  It was a lot more effective in blending it and getting the right consistency.Vitamix Recipe for Avocado Smoothie Blended

Here’s the Vitamix in action destroying those avocados!Avocado SmoothieHere’s the finished low carb smoothie! The consistency is like a light yogurt with a nice, sweet taste. This is perfect on its own or could serve as a nice base for adding in other flavors like nut butters or protein powders! I served it in a 16 Oz. Ball Jar with a metal spoon straw. The Ball Jar’s are great because you can mix up a smoothie and throw it in the refrigerator for later.

  • 1 Avocado (230g whole, 175g de-skined and de-seeded)

Instructions

  2. Cut the avocado in half, remove the seed and remove the flesh from the skin, add to the mixer
  3. Add in 3 oz of ice (6 cubes from my ice maker)
  4. Blend on the smoothie section of your vitamix or until the mixture is yogurt consistency if using a regular blender
  5. Serve or refrigerate!

If you’re making something like a chocolate mousse or a Low Carb Cheesecake, this stuff is perfect. I’ve never seen it in a store before so I stock up on it online. You can get liquid stevia or truvia at somewhere like Whole Paycheck but I like this stuff better.

When life gives you limes, make low carb, keto margaritas!!  Today I continue on my quest to make keto friendly margaritas.  Previously I’ve made bacon bourbon which was more of an acquired taste.  However, today we will make a very versatile, fresh margarita.

Boston Shaker
The Boston Shaker is the premier mixer for cocktails. It consists of a glass that fits into a metal container with a solid seal. Good for Keto margaritas, fizzes or flips!

Although not a super useful item for keto, if you ever need fresh lemon or lime juice, this is the device for you! Super fast fresh juice for keto margaritas!!

Last time I introduced the White Russian Poptail which was my first foray into the world of poptails or a popsicles combined with cocktails. I wanted to continue my journey and see how far I could push my Zoku. Today I’m going to show you how to make a Smashed Raspberry Lemonade Poptail! Also, this will be the first time I’ve gotten a chance to try out my Homemade Vanilla that I made over the holidays!
Smashed Raspberry Lemonade Poptail IngredientsThis recipe follows the same general formula of all of the other popsicles. For 2 popsicles, its 60 mL of heavy cream and basically 60 mL of whatever else you want.  If you are adding alcohol, its a maximum of 20 mL for it to still freeze.  So today I also added Raspberry Sugar Free Syrup, Lemon Juice and Homemade Vanilla!Smashed Raspberry Lemonade Poptail in ZokuAll you do is add the liquid to the Zoku and wait!  Because of the alcohol it does take almost double to freeze, or about 16 minutes.Smashed Raspberry Lemonade Poptail

Here’s the finished product!  This one turned out really well and had a nice tart finish!

  • 60 mL Heavy Cream
  • 25 mL Torani Sugar Free Raspberry Syrup
  • 10 mL Lemon Juice
  • 20 mL Vodka
  • 5 mL Vanilla
Instructions
  1. Freeze Zoku device for 24 hours or until fully frozen
  2. Each popsicle uses 60 mL or 4 Tablespoons of mix total, if only using one flavor, make as above, if making multiple flavors, make a mix of (3 parts Cream to 2 parts Coconut Milk to 1 part Flavored Syrup ) to total 120 mL for two
  3. Mix the ingredients and place them in the freezer as well, you want all the ingredients to be as cold as possible
  4. Bring out the Zoku and place the popsicle stick in it
  5. Add the liquid and wait 16 minutes, since this is a poptail and contains alcohol, it will take longer to freeze and might not completely freeze
  6. Once it is completely frozen (you can check by using a toothpick), screw on the extractor to release the mold
  7. Snap on the drip shield and eat!
Notes
Only contains ⅕th of a shot of alcohol, approximately 13 proof or 7% alcohol. Any higher and it wouldn't freeze.

Last week I wrote an article on how to make keto friendly popsicles using a Zoku. After having a few popsicles I got to thinking, what other uses could there be for this thing.  Sure, popsicles are good and all but what else could I make?  Then to dawned on me, I could make Poptails, or popsicle cocktails! I made alcoholic whipped cream so why not make alcoholic popsicles?  With this in mind I set out to create the perfect, keto friendly Poptail.  What I came up with is a spin on the classic, White Russian.  See a traditional White Russian is just made up of cream, Kahlua and vodka.  Luckily I already had some DaVinci Sugar Free Kahlua and the popsicles are mostly cream anyway, I just had to add vodka!  There is a problem with adding alcohol to something you’re going to freeze.  Alcohol has a lower freezing point than water and so it must be accounted for. Vodka is 80 proof which is 40% alcohol. So if we were to try and freeze straight vodka we would need a freezer that was set to -50 degrees F. If we reduce the proof to 40 or 20% alcohol we get a little better and the temperature would be -9F, still outside the range of the average freezer and the Zoku. What I settled on was a ratio of 10 mL of alcohol per 60 mL popsicle which given vodka is 80 proof comes out to 13.3 proof or around 6.6% alcohol.  This moves the freezing temperature to a much more reasonable 18F.  Also, it means that the poptail will be on par with a beer or wine cooler so it won’t taste much like alcohol. So the Zoku will take longer to freeze than without the alcohol but it will be able to do it.  Anyway, that’s the end of the science rant, on to our keto poptail!
White Russian Poptail IngredientsThe ingredients are much the same as last time.  The base is 60 mL of heavy cream and then a combination of 20 mL of Unsweetened Coconut Milk, 20 mL of DaVinci Sugar Free Kahlua and 20 mL of Vodka.White Russion Poptail in ZokuHere’s the poptail loaded into the Zoku.White Russan PoptailHere’s the finished Poptail.  This was really good, I mean really, really good.  It took longer to freeze than the regular popsicles, but it was worth it.  The end popsicle was actually smoother and softer than the regular popsicle because the alcohol doesn’t freeze as much.

My family has a long history with Vanilla.  My grandparents brought back two bottles of Mexican Vanilla eons ago and ever since we’ve been rationing its use in recipes. I’ve searched far and wide for the same bottles of vanilla but have  always come up short.  Store bought vanilla just doesn’t taste the same.  So when I wanted to make a homemade gift for my family this Christmas, I knew what I had to do, I had to recreate the infamous Mexican Vanilla. Through my research, different types of vanilla beans have distinct flavor profiles. It turns out you can actually buy Mexican Vanilla Beans just like those used in my family’s favorite vanilla! In case you were wondering were this fits into keto, vanilla is great for some keto ice cream, homemade whipped cream or even a cheesecake! So, after getting some beans and a cool bottle, I was off to vanilla land.

Caveman Keto Vanilla I couldn’t believe how well they turned out! When I handed them out at Christmas I’m not sure people realized at first that they were a homemade gift 🙂  I guess my Photoshop skills were too good.Vanilla IngredientsHere’s the ingredients you’ll need. The most important is the Vanilla Beans.  You can get any type you want but I was specifically going for the flavor of the Mexican Vanilla Beans.  The vodka actually doesn’t matter that much but I used a high quality one anyway.  Finally you need bottles.  You can put it in anything you want.  I was aiming for a specific look so I grabbed a dark blue Boston Round Bottle.  This has the added benefit of not letting as much light in.

Tito's VodkaNext up is the Vodka.  In case you hadn’t heard of it, Tito’s is widely regarded as one of the best vodkas on the market. Its distilled 6 times and has won a ton of awards.  As an added benefit its Gluten-Free! As an even bigger benefit its cheap!! You only need a 750 mL of vodka for this recipe but it was cheaper to buy the handle of it so I got the larger one.  If you won’t drink the vodka separately just get a 750 mL and you’ll use it all up in the recipe.Washing Boston Round BottlesWash the bottles out and make sure they’re dry!Boston Round CapThe caps have a nice seal on them.Mexican Vanilla BeansAnd here is the star of the show, the Vanilla Beans!Split Vanilla BeanNow, with a really sharp knife, slice the Vanilla Beans lengthwise. Since they are a little bigger than the bottle, I just pushed them into the bottle so they twist into place. I spent a decent amount of time trying to think what I wanted to do for the labels.  I wanted to print them and fairly simply.  So, I picked up a pack of Avery 5263 2″ x 4″ labels.   • 750 mL Vodka
  • 24 Vanilla Beans
  • 6 Boston Round 4 Oz Bottles
  • Labels
Instructions
  1. Start by assembling all the ingredients for the vanilla
  2. Wash and dry the Boston Round bottles
  3. Slice the vanilla beans lengthwise
  4. Add 4 Vanilla Beans per bottle, or 1 bean per ounce depending on your bottle size
  5. Carefully fill the bottle with Vodka
  6. Cap the bottle and shake the Vanilla
  7. Apply the labels
  8. Let the vanilla sit for 6 weeks in a dark location; shake somewhere between every day and every week

The vanilla beans can be reused, simply add more vodka and shake!

So as you may know, I recently acquired an ISI Mini Whip.  If you’re not familiar, its a device that makes whipped cream.  Its the mini version of the one they use at Starbucks. My first foray into custom whipped cream was Alcoholic Whipped Cream. Since the holidays are coming up, I wanted to try some new recipes with the charger and I came up with a keto friendly whipped Egg Nog. I love whipped cream.  There, I said it.  Its one of those guilty keto pleasures I like to partake in.  The stuff is just so good on coffee or over some chocolate mousse. Its hard because its not exactly bad for you, but its not great either.  It has some carbs and the stuff adds up fast.  Do you even know how small the 5 mL serving size is? So, since I’m obsessed, I’ve been researching how to make my own. It turns out, its pretty damn simple! All you need is a ISI Mini Easy Whip, an N2O cartridge, and some cream! The advantage for keto is you can completely control what you put into the whipped cream.  And as I will show you today, you can do some pretty cool stuff like infuse the cream with some Vodka!  By the way, alcoholic whipped cream is all the rage right now with young whipper snappers and sells for an insane $10-15 per can.  This recipe is WAY cheaper.

Whipped Cream on top of Egg NogHere’s some Vanilla Vodka Whipped Cream on top of some keto eggnog sprinkled with nutmeg!Keto Whipped Cream IngredientsThis recipe is pretty simple.  The model charger I have is 1/2 pint or 250 mL.  So whatever you want to whip, you make sure it adds up to 250 mL.  I’m using my angled measuring cup which has mL’s on it.  Start by measuring out 200 mL of Heavy Whipping Cream. Then add 1/4th tsp Vanilla and 1/4 tsp EZ-Sweetz. Then top off the rest of the mixture with Vanilla Vodka until it reaches 250 mL (approximately 50 mL which is one shot).ISI Mini Easy WhipNow onto the whipping part!  I was so excited the wife finally greenlighted this purchase 🙂  The unit comes with the parts above.  From left to right we have the pressurized canister that holds the cream, then the lid, the charger holder and the tip.Whipepd Cream Step 1Start by pouring the liquid into the unit and attaching the head.  Make sure the gasket is place and that it is screwed in evenly and tight.  This will get pressurized so you want to make sure it is correct.Whipped Cream Step 2Now, place an N2O cartridge into the holder and screw it on.  This will pressurize the canister.  The screw part is just to make sure it connects evenly.  Once it is pressurized, you remove this part.Whipped Cream Step 3Now add on the nozzle.  You’ll notice that this covers the pressurization port.  Shake the unit 3-4 times.  You don’t want to shake it too much or else the cream might seize.Whipped Cream on CoffeeTa-da! Here’s the cream on top of some coffee.

Note: The sky is the limit on what you can make.  The Vodka is completely optional and if you omit it you’ll make regular cream.  You can even experiment with adding various Torani Sugar Free Syrups to make different flavor creams!

When life gives you limes, make keto margaritas!!  Today I continue on my quest to make keto friendly margaritas.  Last time I made bacon bourbon which was more of an acquired taste.  However, today we will make a very versatile, fresh margarita.

Keto MargaritaMargaritas are generally a pretty high carb item but they don’t have to be.  If you use fresh squeezed lime juice, tequila and a little artificial sweetener, it can be a low carb drink. Note: As an astute reader pointed out, 1.5 oz fresh lime juice is 3 carbs per serving.  So not too bad, much better than the sweetened lime juice typically used in these cocktails.

Citrus JuicerStart by juicing 2 two limes.  Cut them in half and use a citrus juicer to extract the lime juice.  You can also use a manual plastic juicer, or just squeeze it in your hand.  This thing does make quick work of the limes though. If you’re lazy, you can also buy RealLime brand lime juice which is presqueezed.

Lime JuiceHere is the squeezed juice.  This unit has a nice pour spout so you can go straight into the cocktail.

Ice BagThe next step is optional, but I think it adds a lot to the presentation of your cocktails.  The above is an ice crushing bag which allows you to put your ice into it, smash it with a blunt object, and get crushed ice!

Extra ingredients The last two ingredients are tequila and sucralose.  I used to primarily use stevia extract but I think sucralose has a better taste.  I use 1 jigger (1.5 oz) of tequila, 1 jigger of lime juice and 4 drops of sucralose.

Finished Keto MargaritasHere are the finished cocktails!  Garnish with a slice of lime and enjoy.

  5. Use 4 drops sucralose
  6. Mix and garnish with a slice of lime
Boston Shaker
The Boston Shaker is the premier mixer for cocktails. It consists of a glass that fits into a metal container with a solid seal. Good for Keto margaritas, fizzes or flips!
Juicer
Although not a super useful item for keto, if you ever need fresh lemon or lime juice, this is the device for you! Super fast fresh juice for keto margaritas!!
EZ-Sweetz
EZ-Sweetz is liquid sucralose. In case you weren’t aware, powdered splenda contains carbs as binding agents to get it to look and act like sugar. If you’re making something like a chocolate mousse or a Low Carb Cheesecake, this stuff is perfect. I’ve never seen it in a store before so I stock up on it online. You can get liquid stevia or truvia at somewhere like Whole Paycheck but I like this stuff better.

As I posted yesterday in Cheesy Sausage Balls, we had some friends over for tapas last weekend.  One of the things I wanted to do was make a signature, keto friendly cocktail.  What’s more keto than Bourbon and Bacon?

Here is resulting cocktail!  I used a method called fat-washing to infuse the bourbon with a bacon flavor and put a piece of bacon into the cup.

750 ml of BourbonStart with a 750 ml bottle of bourbon and pour it into a large measuring cup.

Bacon and BourbonAdd 1/3 of a cup of bacon grease to the bourbon and mix. Place the bacon and bourbon in the freezer.

Frozen BourbonI made the mistake of putting the bourbon and bacon grease bacon into the container.  If I were you, I would leave it in the measuring cup so it is easier to separate out.  The next step is to discard the fat layer and filter out the fat.  I used a coffee filter.

Finished Bacon BourbonHere is the finished Bacon infused Bourbon!

Hard Cooked BaconFor garnishment cook some bacon until crisp.  I tried to cut a slit into the edge of it to place it on the edge of the glass but it didn’t hold.  I ended up just placing it in the glass but I think it looked good!
