Cheese Tacos are one of those magical low carb creations that forgoes the need for bread entirely! As many of you might have noticed, I haven’t posted in over two years!  Life has been very busy.  My wife and I had a kid who’s now 2 (mmm, seems to be a correlation with the posting …) and we moved into a new house. I haven’t stopped doing keto but I’ve mostly been just posting on Instagram. This recipe is one I posted recently that people were really interested in so I figured I’d jump back on the posting bandwagon. I’m filling this with Crockpot Pork Carnitas but you could use any meat.  You will need a well seasoned Cast Iron Skillet in order to melt the cheese and assure it doesn’t stick to the pan.Pork CarnitasStart by heating the Pork Carnitas in a hot cast iron pan.  We want to reduce the amount of liquid and crisp the pork.Salsa with Pork CarnitasThis step is optional but I added some chunky salsa to the pan to mix in with my meat.Starting Cheese ShellStart the cheese taco part by pushing the meat to the side and making a pile of cheese in the center.Cheese ShellYou want to wait until the cheese has melted and starts to bubble.Pork Carnitas on Cheese ShellNext, use a spatula to place the meat onto the cheese.  Make sure to pat it down into the cheese.Cheese Crusted Pork Carnitas TacoPut any additional fillings you want into the taco.  I used some guacamole and sour cream.Cheese Crusted Pork Carnitas Taco on Cast IronThis next part takes a little bit of practice, you might break a few at first if you’re not used to sensing when the cheese is done. Ingredients
  • 5.50 oz Pork Carnitas
  • 1 fluid ounce, Guacamole
  • 2 fluid ounce, Mexican Shredded Cheese
  • 1 fl oz(s), Sour cream
  • 2 fluid ounce, mild salsa
Instructions
  1. Measure out around 5 Oz. of Pork Carnitas
  2. Heat a cast iron skillet until smoking
  3. Cook Pork Carnitas until liquid is gone and starting to brown
  4. Add in salsa and mix with the Pork Carnitas
  5. Move meat to the side and place cheese in Cast Iron in a large pile
  6. When the cheese is bubbling, use a spatula to place the meat onto the pile of cheese
  7. Add fillings, in this case I used sour cream and guacamole
  8. When the cheese is hard, fold over, then carefully transfer to a plate
Notes
You can use any meat or filling. Also largest carb addition is salsa so leave it out for a lower total carb count.

This is hands down, my favorite spatula. I don’t even let it go in the dishwasher for fear I’ll need to use it during the hour wash cycle. Its that amazing. The longevity and flexibility allows you to get under bacon weaves or complex egg structures with ease.
Cuisinart PSC-650 6-1/2-Quart Crockpot
Useful for set it and a forget it meals where you place all the items into the crockpot and let it rip! Most crockpots use a ceramic, dishwasher safe bowl that’s heated from the outside to a low temperature which allows the ingredients to simmer for hours.

Ice cream on keto?! What is this sorcery? The Vitamix of course 😉 In the latest edition of my Vitamix Recipes series I’m going to show you how to make low carb ice cream in under a minute! There aren’t that many dessert recipes on my site (its mostly bacon) but once and a while its nice to bring some low carb sweets into the mix. Read on to learn how to make a keto friendly strawberry ice cream with a blender!

Ingredients for Low Carb Ice Cream

Here’s the laydown of the ingredients.  Most of these are in every ketoers fridge anyway.  You have your very own Caveman Keto Vanilla, right? You might wonder why strawberries. Well it turns out they are one of the lowest carb fruits, especially since a small amount will add a lot of strawberry flavor. 100 grams has 7.68 grams of carbs and 2g of fiber for net 5.68 carbs.  So each serving is getting a very small amount of carbs. For the sweetness, I use EZ-Sweetz which is liquid sucralose.

Start with the liquids so the blades have something to catch.  I build all of these recipes right in the blender on top of my scale and just zero if after each ingredient.

Low Carb Ice Cream

I have to admit, I was pretty skeptical that I could get ice cream out of a blender but its really good! For a harder consistency, freeze for 30-60 minutes before scooping. If you freeze some, microwave it for 27 seconds the next day before scooping to get it soft again.

  • ¼ tsp Vanilla Extract

  • 8 strawberries (100g)
  • Around ¾ cup ice (194 g)
Instructions
  1. Place the ingredients in the Vitamix in the order listed
  2. Using the variable speed section, start on 1 until the solids have been pulverized then slowly rotate to 10 while using the tamper to push the ingredients into the blades; blend for 30-60 seconds until mounds form

EZ-Sweetz
EZ-Sweetz is liquid sucralose. In case you weren’t aware, powdered splenda contains carbs as binding agents to get it to look and act like sugar. If you’re making something like a chocolate mousse or a Low Carb Cheesecake, this stuff is perfect. I’ve never seen it in a store before so I stock up on it online. You can get liquid stevia or truvia at somewhere like Whole Paycheck but I like this stuff better.
OXO Kitchen Scale
To really count calories on keto a good scale is essential. This one is the best. Period. It measures down to 0.1g, can handle up to 11 lbs and has a pull out display so you can put large items on it! Check out my MFP guide for more info on tracking calories.

Today I’m going to make a delicious, creamy Broccoli soup, all cooked in the Vitamix! Cooking food in the Vitamix still amazes me.  How can a blender actually cook food? It turns out that the friction from extended blending heats the liquids to near boiling temperatures and can cook the food. A few weeks ago I tested this out and cooked scrambled eggs. We’re going to use the same principle to make a quick soup. If you’re just reading about blending, check out the rest of the recipes in this series under the Vitamix Recipes tag.

Ingredients for Broccoli Soup

Here’s a shot of all the ingredients. I’m using almond milk as part of the mix to reduce the calories but if you want, you could just use more heavy cream.

Cutting up the Broccoli

I used a fresh head of broccoli but you could also use frozen.  I cut the florets off of the stem and just used the florets.  I tried using the entire head including the stem but the soup had a woody taste to it.  My wife didn’t mind the taste but I like it better with just the florets.

Liquids First

As with all Vitamix Recipes, you want to properly stack the ingredients.  You want to make sure there is no air gap near the blades so you always start with the liquids.

Squishy Stuff Next

After the liquids come the soft ingredients, in this case cheese.

Then the Solids

Finally, add in the solid ingredients like the broccoli and onions.

As you can see, we’re using one of the pre-programmed modes of the Vitamix. This is the soup mode that starts out slow to blend the ingredients into a liquid and then goes to high for 5 minutes to heat the soup up.  If you don’t have this mode, just use the variable speed and do 1-3 for 30 seconds until blended and then 10 for 5 minutes.

The Vitamix Really Does Heat Soup

The end of this recipe is really cool, after blending for 5+ minutes you remove the lid and a whiff of steam comes out!  I checked the mixture with my Thermapen at the end and you can see its at 191 degrees! The Vitamix really does cook food!!

For some added flair and texture, I put some more broccoli florets at the bottom of the soup.

I served the soup in little ramekins and topped it with some salt, pepper, cheddar cheese and a broccoli floret!

Ingredients
  • ¼ cup heavy cream

  • ¼ cup sour cream
  • ¼ cup almond milk
  • 4 ounces cheddar cheese (115g)
  • 1 Head Broccoli (202g) (7 oz Broccoli), steamed
  • ½ onion (70g)
  • ½ Chicken Bouillon Cube
Instructions
  1. If starting with a head of broccoli, cut off just the florets
  2. Steam the florets in the microwave (3 minutes with a little water in a bowl) or on the stove
  3. Add in the liquid ingredients into the blender
  4. Add in the cheese, broccoli and onion
  5. Break up the bouillon cube and sprinkle it over the top
  6. Mix on the soup setting
  7. Serve!
Notes
The stalks of the Broccoli have a woody taste, so I don't include them in the soup. I tried it both ways and liked it better without the stalks but you can make it either way.

Thermapen
This probably shouldn’t be the first thing you buy for your keto kitchen, but eventually, you’ll end up buying this thermapen. It seams ridiculous to blow $80+ on a temperature probe but once you go through 5 other cheap ones, or burn your hand waiting for the temperature to stabilize, you’ll wish you just picked one of these up. Its way faster and more accurate at reading temperature and I now almost exclusively cook meat to a done temperature rather than a specific time.

Non-slip Cutting Board
Let’s face it, keto involves a lot of prep. You’ve got to slice all those vegetables, cut up all that meat and not just any old board will do. Make sure to grab yourself a nice non-slip one for the kitchen!

The recipe I was most looking forward to was a Coffee Smoothie! I’ve never tried to formulate a low carb blended ice drink at a coffee shop because I was always afraid of what they put in those things. I’ve tried making a Coffee Smoothie before with my old blender but I always was left with chunks of ice or a blended mess that’s half liquid. I really threw everything but the kitchen sink at this one but luckily other than the cream its all near zero calories. I used some Torani Sugar Free Syrups for both the sweetening and the flavoring for this smoothie. I actually used two different types of coffee.  I did some double strength coffee ice cubes and some regular cold coffee.Coffee Smoothie Before Mixing

Start by layering the ingredients into the Vitamix. You want the liquids to go on the bottom, then the powders or semi solids followed by the ice.  The liquids make it so that when the blending starts there isn’t an air gap and its more likely to blend. I’ve found that you generally you want an equal portion of liquid to ice for the recipe to blend well.Coffee Smoothie in Vitamix

Today I’m going to show you how to make scrambled eggs at the push of a button! I’ve only had the Vitamix for a few weeks now but I am totally hooked!  I’ve been busy coming up with low carb, keto friendly Vitamix Recipes to test out with this thing. This week I wanted to try out one of the hotter features of the Vitamix which is it can actually cook food! It blends for so long that the friction causes the food to heat up.

If you follow me on Instagram, you know that the meal I like to play with the most is breakfast. I decided to try and see if I could make scrambled eggs in a blender, not just mixing them, but cooking them!  Read on to see how it went …

Scrambled Eggs Vitamix Style
Today’s recipe is in a fancy GIF format, let me know in the comments if you think its useful or whether its a waste of time 🙂 This recipe is super simple in that you just dump the ingredients in the blender and turn it on. Make sure to put the liquids in first, then the solids. If you put the solids in first, it will create an air gap around the blade and it won’t mix properly. For the actual cooking of the eggs, you use the soup setting. If you’re blender doesn’t have the presets, slowly increase the speed until its at max and let it run for 5 minutes or until the eggs harden.

They ended up with a super smooth and fluffy consistency with almost no cleanup!  If you’ve got a Vitamix, try it out!

  • 2 Oz. Cheddar Cheese

Instructions
  1. Add the liquids into the Vitamix container (eggs and heavy cream)
  2. Add the garlic and cheese
  3. Blend using the soup setting on the Vitamix, it will actually cook the eggs! (If you're blender doesn't have a soup setting, cook on high for 5-6 minutes until it solidifies)
  4. Serve and top with salt and pepper

You know those Pinterest fails where the outcome never looks like the photo? Well that’s how my last blender caught on fire while my wife was making some frozen two ingredient ice cream amalgamation. I was able to fix the blender but it never really was the same.  So for Christmas my wife got me the blender I always wanted, the Vitamix Pro 750!! First up on my list to make is an Avocado shake that my sister raves about.  I’ve tried it before with my old blender but it always had big blocks of ice and didn’t ever fully mix.  I decided to revisit it with the Vitamix and it was awesome!

Look for more Vitamix Recipes as I experiment with this bad boy over the next few months. I also plan on starting a low carb smoothie series to cover all the keto options out there. Supposedly you can make all sorts of crazy nut butters and soups with this thing as well. If you have any good suggestions or recipes for me sound off in the comments!

Avocado Smoothie IngredientsHere’s the Vitamix with all the ingredients you’re going to use. The original recipe had all heavy cream but it was just way too many calories so I split it up into half Almond Milk and half heavy whipping cream.  You can use any sweetener but I prefer liquid EZ-sweetz since its concentrated, liquid and easy to use.Avocado Smoothie AssemblyIn an effort to reduce the number of pictures for each recipe, I tried entering the 20th century with a GIF! In general with blending, you want to add the liquids first, then the solids, followed by the ice.  The liquids reduce the chance of an air gap and help the blender mix the ingredients effectively.  Start with the almond milk, then the heavy cream, EZ-Sweetz, an avocado and then the ice!Avocado Smoothie Ingredients on Vitamix

Here’s the Vitamix in action destroying those avocados!Avocado SmoothieHere’s the finished low carb smoothie! The consistency is like a light yogurt with a nice, sweet taste. This is perfect on its own or could serve as a nice base for adding in other flavors like nut butters or protein powders! I served it in a 16 Oz. Ball Jar with a metal spoon straw. The Ball Jar’s are great because you can mix up a smoothie and throw it in the refrigerator for later.

Instructions
  1. Add the Almond milk, heavy whipping cream and EZ-sweetz to the vitamix
  2. Cut the avocado in half, remove the seed and remove the flesh from the skin, add to the mixer
  3. Add in 3 oz of ice (6 cubes from my ice maker)
  4. Blend on the smoothie section of your vitamix or until the mixture is yogurt consistency if using a regular blender
  5. Serve or refrigerate!

Welcome to this week’s edition of Fry-day!  Today I’m going to break out the fryer and fry some cheese!  If you’re not familiar, there is a cheese Queso de Freir that is specifically for grilling or frying. Its a spongy cheese that kind of reminds me of mozzarella.

In the latest installment of my Keto Grilling segment I’ll show you how to whip up an easy and delicious grilled avocado stuffed with salsa!  This is the perfect side to prepare if you’ve already got the grill fired up!!Avocado Split in HalfYou want to start with an Avocado that’s not quite ripe. You want it to be a little harder than if you were going to just eat it.  Split the avocado in half, remove and discard the pit.Avocado on the GrillThe next part couldn’t be any easier, throw the avocado on the grill! When you first throw them on the grill they’ll be light brown.Finished Avocado on the GrillThen as they cook they’ll turn bright green.  You can really cook them for as long as you want but as long as they’ve got a nice char and are soft to the touch, they’re done.Grilled AvocadoThen when you plate the Grill Avocado’s, add in some fresh salsa to the center!  I had this side along with some bacon wrapped Filet Mignon so I just threw the avocados on a few minutes before the steak and cooked them for around 15 minutes.

Ingredients
  • 1 Avocado, not quite ripe but brown
  • 2 Oz Salsa

Instructions
  1. Preheat the grill to medium-high heat
  2. Slice the avocado in half, remove and discard the pit
  3. Salt and pepper the avocado meat
  4. Place on the grill, turning every few minutes until the skin turns greenish and the meat has browned
  5. Add a scoop of salsa to the center of the avocado

In case you couldn’t tell, I’m now obsessed with my grill! Last time I made Beer Can Burgers so I figured the next logical step was to make Beer Can Chicken! If you’ve never heard of it before, the idea is to cook the chicken slowly over indirect heat on top of an aluminum can of beer. The beer steams the chicken from the inside as it cooks! Note that you can use any beer, this particular one someone left at my house so this seemed to be a good way to get rid of it.  It would also work with a lower carb beer like Michelob ultra or Miller 64.
Preparing Beer Can ChickenThis recipe starts with a whole, thawed chicken.  Remove any gizzards and plastic that it may come with.  Make sure to check the front and the back.  Then use kitchen shears to cut away any excess parts left over from the processing of the chicken. You should now have a nice opening the size of a beer can as shown on the right.Chicken on Beer CanNow for the fun part! Make sure the chicken is dry and then rub down with some oil.  I used some bacon fat out of my reserve. Then I rubbed it down inside and out with a generic Rotisserie chicken seasoning. Pour out half, or a little more than half, of the beer and then set the chicken on it!Beer Can Chicken on the GrillNow, preheat the grill to medium high heat and setup for indirect cooking. I used the outer two burners to heat the grill and left the middle one off. Then you just set the chickens on the grill!Finished Beer Can Chicken on the GrillAfter about an hour you’ve got a perfectly cooked, crispy chicken that’s been steamed from the inside! Make sure to check the temperature and verify its reached at least 165 degrees in the breast and 180 in the thigh.Beer Can ChickenFor the first meal my wife and I split a breast and I grabbed a leg and a wing along with a side of creamy cheesy spinach!

Ingredients
  • 1 Whole Chicken
  • 1 can Beer (Aluminum)
  • 1 Tbsp Bacon Fat
  • Rotisserie Seasoning
Instructions
  1. Preheat the grill to medium high heat, setup for indirect grilling (no heat under the bird)
  2. Make sure the chicken is completely thawed if frozen
  3. Remove and discard gizzards
  4. Cut away any loose skin or chicken parts from the breast cavity opening
  5. Dry inside and out
  6. Apply the bacon fat or oil to the exterior of the bird
  7. Rub in Rotisserie seasoning on inside and out
  8. Remove a little more than half of the beer from the can and set the bird on the can
  9. Grill for around 1 hour or until the breast meat reads 165 and the thighs read 180
  10. Allow to sit for 5-10 minutes before slicing

Thermapen
This probably shouldn’t be the first thing you buy for your keto kitchen, but eventually, you’ll end up buying this thermapen. It seams ridiculous to blow $80+ on a temperature probe but once you go through 5 other cheap ones, or burn your hand waiting for the temperature to stabilize, you’ll wish you just picked one of these up. Its way faster and more accurate at reading temperature and I now almost exclusively cook meat to a done temperature rather than a specific time.
