Instructions
  1. Thaw the duck and remove excess fat and any associated extras like the heart, liver, neck, etc
  2. Tie the legs together
  3. Cook at 300 degrees for 3 hours, turning and poking with a knife every 30 minutes, you should poke through the skin but not penetrating the meat. Maybe 25 or so pokes and you should see fat oozing out of the pokes
  4. Quarter and serve!
