Bacon Wrapped Scallops

Ingredients
  • 12 Scallops
  • 12 Thin Bacon Slices (Microwaveable)
  • 12 Toothpicks
  • Salt and Pepper to taste
  • 1 Tbsp oil
Instructions
  1. Start by heating a skillet over high heat with 1 Tbsp of oil (I use bacon fat)
  2. Wrap each scallop with a piece of bacon and secure with a toothpick, I used microwaveable bacon because it was thin and would cook quickly. You could also par boil the bacon then fry it
  3. Season with salt and pepper
  4. Cook for 2.5 minutes per side
