Welcome to this week’s edition of Fry-day!  Today I’m going to break out the fryer and fry some cheese!  If you’re not familiar, there is a cheese Queso de Freir that is specifically for grilling or frying. Its a spongy cheese that kind of reminds me of mozzarella.

If you haven’t already figured it out, I’m kind of obsessed with my Deep Fryer. This week, in order to scratch the frying itch I’m getting creative. This fry-day I’ll show how to deep fry Broccoli! I couldn’t believe how well this worked out.  Each sprout exploded with flavor almost like a popcorn kernel!

If you couldn’t tell, I’m completely and utterly obsessed with deep frying everything in site.  So much so, that I’ve created a mini-series called Fry-day! Last time I deep fried some sausage wrapped in bacon.  This week I’m back with, guess what, more meat wrapped in bacon! There is an appetizer from BJs that’s bacon wrapped beef but its precooked and I just knew I could fry it.  So break out the deep fryer and get sizzling!Beef Eye Round ChunksFor this recipe, I used beef round eye that was already cut for kabobs.Beef with BaconI started by cutting the beef kabob pieces into 4 rectangular sections so they were approximately 1″ x 1″ on the square side.  Basically I wanted the size down so that I could use just 1/4 a slice of bacon on each one. I then doused the beef with some Montreal Steak Seasoning for added flavor.  Then I slices a piece of bacon in half and wrapped.  You then want to use a bent metal skewer to stab through the overlapped portion of bacon and through the meat. It sounds complicated in words but you’ll see what I mean when you wrap it.Deep Frying the BeefThen, off to the deep fryer they went!Bacon Wrapped BeefHere’s a picture right out of the fryer. I really like frying bacon wrapped meat because the bacon sticks quite well. The frying acts like a glue.  Also, if you cook these in the oven you always end up with either rubbery bacon or burnt beef.Finished Bacon Wrapped BeefSpoons, the latest crazy in food photography!  Ok, so maybe not, but you have to admit, this is one awesome looking Beef and Bacon Roll.

  1. Preheat oil in deep fryer to 370 degrees

  3. Take a piece of bacon, stretch it and then cut it into four pieces
  4. Season the meat with Montreal Steak Seasoning
  5. Wrap the beef with the bacon and skewer
  6. Cook for 3 minutes in the deep fryer

McCormick Montreal Steak Seasoning
I don’t know why but I’ve always loved this steak seasoning. It has the right amount of kick and has a touch of cajun without being too spicy. I wouldn’t spice up a Wagu with this stuff but perfect for a quick fix on some standard meat.
Metal Skewers
Metal skewers are a great addition to any BBQ set. They’re perfect for skewering some shrimp or making some kabobs. They can even be used in a deep fryer to make a super appetizers!

For my birthday my sister got me a meat CSA from Stillman’s farm.  I actually had no idea such a thing existed! This week’s haul came with some Chicken Italian sausages.  I hadn’t broken out the fryer recently so I had an idea for the sausage, why not wrap it in bacon and deep fry it as part of my fry-day series! This snack mimics many of the store bought appetizers where they wrap meat with bacon but homemade and cheaper!CSA Italian Pork SausagesHere’s the sausage that came as part of this week’s haul.Wrapping the SausagesI started by cutting the sausage into four pieces and wrapped them as shown,  I used half a slice of bacon, placing the sausage so that the cut will be wrapped.  Then I wrapped one side of the bacon over and then the other.  Basically this makes it so it seals the cut side so it all doesn’t flop out and the skewer goes through the skin part and keeps it together.  Sounds overly complicated but I wrapped it like 5 different ways before I arrived on this ideal version 🙂Bacon Wrapped Sausages on a SkewerI then bent a metal skewer so that it would fit in the fryer, and slipped the sausages on.  Notice the orientation of the skewer, through the bacon and also through the skin part of the sausage.Bacon Wrapped Sausages after FryingMmmm! When most people talk about frying eggs, they pan fry them. That begs the question, can you deep fry eggs? So for this weeks fry-day special I broke out my deep fryer, heated up some lard, and got to frying!
Eggs in Prep CupsWhile the lard is heating up, start by breaking some eggs into small prep bowls. This process has to be fast so you won’t have time to break open the eggs.Deep Frying EggsOnce the fryer is up to temperature, about 375 degrees, the fun part starts.  Quickly slip the egg into the oil.  Then, using two metal spatulas, “contain” the egg. It will want to split apart but if you coerce it into a ball it will fry whole.BaconOf course you can’t have breakfast without bacon…Deep Fried EggsHere’s the finished shot of the deep fried egg! Instructions
  1. Heat some oil in a deep fryer to 375 degrees
  2. Cook some bacon
  3. Crack two eggs into a prep bowl
  4. Quickly slip the egg into the center of the fryer, don't drop them in, try to slip them in near the surface, but be careful since the oil is hot
  5. Using two spatulas, corral the egg into a ball, it may naturally stay in one piece or it may decide to go all over the place
  6. Fry until it stop bubbling, 3-4 minutes
  7. Let drain on some paper towels and you've got a deep fried breakfast!

Stainless Steel Prep Bowls
These little guys are perfect for pre-portioning ingredients. I use them for holding spices or in a dish where I incrementally add ingredients as I go. You can pre-chop some onions or peppers and store them for later. I even use them to store parts of a lunch I don’t want microwave like in my taco recipe!

Now that it’s officially spring, the outdoor barbeque / picnic / get together season begins. But what do you do if you’re on keto? Chips are out and all of those sides everyone loves seem to stuffed with carbs. Well, you make your own keto version! Today I’ll be making a keto spin on the classic, 7-layer bean dip. Of course this version won’t have beans at all and I hate olives, so this version is only 5 layers 😉 As a bonus, I deep fried some cut up low carb pita as a chip!
Pyrex DishStart with a Pyrex oblong casserole dish.  I like this set because they come with lids so when I’m done I don’t need to waste tin foil or cling wrap.Sour Cream with Cream Cheese and Mayo and Taco SeasoningStart by preparing all of the fillings.  First we’ll make the sour cream mix.  Its  a combo of sour cream, cream cheese, mayo and taco seasoning.Cream FillingMix the sour cream filling until the lumps are out and its smooth as shown above.Green OnionsNext, chop up 4 Oz, about 1 bunch, of green onions.Shredded Cheddar CheeseWhip out your food processor and grate some cheddar cheese.GuacamoleNow we’re ready for the assembly phase.  The first layer is the guacamole.  Put some effort into making sure this layer is flat and evenly spread out.Second LayerNow, add the cream cheese layer.  This one will be more work to apply since the guac is already down.  I recommend using a large spoon and doing it section by section, making sure not to spread the mixture too thin.Salsa LayerThen do the same for the salsa.Cheddar Cheese LayerAnd add the cheese!Finished 5-layer Keto DipSprinkle the top with green onions.  At this point, the dip is done.  Sometimes I like to press down lightly with my hands to compress the mixture and get any air bubbles out.  Also, it tastes even better after it has had a chance to set.  This is the perfect thing to make ahead of time and take out just before the party.Pita BreadFor an added bonus, I decided to try and make pita chips.  I used 1 low carb pita from Joseph’s.  These are about 4 net carbs per pita so pretty reasonable.Pita Bread split into chip sized piecesI split the pita in half and then cut it into wedges so I got at least 16+ chips out of the one pita.Pita Chip Ready for the FryerThen I placed them in the deep fryer basket.Low Carb Pita Chip!Here’s a picture of the fried chip.  Let me tell you, these turned out way better than I could have ever imagined!   • 4 Oz Cream cheese

  • 10 Oz Cheddar Cheese, Shredded
  • 4 Oz Green Onions, Diced
Instructions
  1. Start by combining the cream cheese, mayo, sour cream and seasoning
  2. Mix until smooth
  3. Chop up the green onions
  4. (Layer 1) Using a medium sized casserole dish, start by spreading out the guacamole on the bottom
  5. (Layer 2) Then carefully spread the sour cream mixture over top of the guac
  6. (Layer 3) Now spread the salsa over the sour cream mixture
  7. (Layer 4) Add the cheese
  8. (Layer 5) Top with green onions
  9. This is best if you let it sit in the refrigerator for at least an hour and up to 24 for the flavors to intermingle
Notes
I used store bought guacamole and salsa but you can make your own as well. Also, try experimenting with additional layers like slices black olives!

I first got this food processor as a wedding gift and I wasn’t sure how I felt about it. Well, let me tell you, its been a godsend on keto! I shred cheese, slice brussels sprouts, and rice cauliflower like a boss!
4.8 Quart Casserole Dish
Great for cooking those gigantic, week long casseroles! I call them 5day meals on the website. Normal casserole dishes are 10×13 but this one is gigantic and can easily be divided into ten portions.

Ingredients
  • 1 Bunch Broccoli
  • 2 Oz Bleu Cheese Dressing
  • 1 tsp Frank's Red Hot
Instructions
  1. Separate the florets from the broccoli stem
  2. Deep fry until golden brown and crispy
  3. While the broccoli is frying, combine the bleu cheese and Frank's red hot
  4. Serve with the dipping sauce!

I’m always on the look out for cool recipes I can feature for my weekly fry-day feature. This week I’m breaking out the fryer and making some coconut battered shrimp! This is a classic restaurant dish and its pretty easy to make it keto friendly.Coconut Shrimp BatterStart by combining the liquids for the batter.CoconutThen get some unsweetened coconut.Coconut Flakes with Coconut BatterFor added texture, I used a combination of flaked and shredded coconut.Egg Yolk with Coconut MixtureI mixed that together and then added an egg yolk to help the mixture set.Finished Coconut batterHere’s the finished batter.Shrimp Ready for BatterThoroughly dry off the shrimp.  If you’re using frozen, make sure to thaw them first and remove any shell.  Keep the tail on.Battered ShrimpNow for the messy part, coat the shrimp in the batter.Frying Coconut ShrimpAnd throw it in the deep fryer!Coconut DipWhile the shrimp was cooking, I whipped up a sauce by combining mayo, unsweetened lime juice and some chili garlic sauce.  The chili garlic sauce is made by Huy Fong Foods who make Srirachi but this sauce doesn’t have carbs. Finished Coconut DipHere’s the finished sauce.Finished Fried Coconut ShrimpHere’s a close up of the coconut shrimp.  They turned out really well!  The coating stuck and turned golden brown.Fried Coconut ShrimpAll hail the coconut gods!

Ingredients
  • Shrimp
  • 12 Large Shrimp
  • 30 g Shredded Coconut
  • 15 g Flaked Coconut
  • 90 g Mayo (6 Tablespoons)
  • 45 g Unsweetened Coconut Milk (3 Tablespoons)
  • 1 egg yolk
  • Dip
  • 60 g Mayo (4 Tablespoons)
  • 10 ml Chili Garlic Sauce (2 tsp)
  • 5 ml Unsweetened Lime Juice (1 tsp)
Instructions
  1. Thaw and dry the shrimp
  2. Mix together the rest of the shrimp ingredients
  3. Coat the shrimp in the mixture
  4. Drop the shrimp into the fryer and cook until golden brown
  5. Mix the dip ingredients together
  6. Serve!
