This recipe is inspired by a trip I took to Wegmans grocery store.  If you haven’t heard of it, Wegmans is a huge high end grocery store chain that is known for its massive prepared food section.  I was surprised to find a wide variety of premade keto foods and one of them was Portobello pizzas.  I instantly thought, “Hey, I could make that!” and off I went. These are super simple and can be customized with different toppings to your individual liking. As a bonus, I just got my new FlavorGod pizza seasoning and this was a perfect opportunity to try it out!De-stemmed Portobello MushroomsThis recipe starts with large, Portobello mushrooms.  Wash them off and then cut the stem as low as you can as shown on the left.Sliced TomatoesNext, slice up a tomato.  Protip: To slice tomatoes, its much easier if you use a sharp, serrated knife.Portobello Caps with FlavorGod Pizza SeasoningAfter the ingredients are prepped, its time to deal with the mushrooms.   Drizzle the Portobellos with some olive oil and then season.  I got this great new Pizza seasoning from FlavorGod that I’ve been meaning to try out.Portobello Pizza with Spinach Tomato and MozzarellaAs I said in the start, you can top your pizza with whatever fits you fancy but I choose to start with some spinach, tomato and Mozzarella.More Cheese and Seasoning on Portobello PizzaI added some Monterey Jack, Cheddar  and another dash of FlavorGod Pizza seasoning. These are now all set for the oven!  I ended up using my tabletop convection oven since this all fit on a small pan. The cooking time will vary but you’re just looking to melt all the ingredients and soften the mushroom.Adding Pepperoni to Portobello PizzaI added the pepperoni half way through the cooking process so it would fit on top of the mountain of cheese 🙂Finished Portobello PizzaMmmm, here’s a shot of the gooey cheese and crispy pepperoni as the Portobello Pizzas come out of the oven!Portobello PizzaAnd done!  Here’s the finished Portobello Pizza!

Ingredients

  • 3 slices of tomato
  • 9 Spinach leafs
  • 1.5 Oz Mozzarella
  • 1.5 Oz Monterey Jack
  • 1.5 Oz Cheddar Cheese
  • 12 Pepperonni slices
Instructions
  1. Preheat Convection Oven to 450
  2. Wash and destem the Portobello Mushrooms
  3. Place the mushrooms cap side down on a foil lined sheet and drizzle with olive oil
  4. Sprinkle with Pizza seasoning
  5. Layer spinach, tomato, cheese and another round of seasoning
  6. Cook in the convection oven until cheese has melted or around 6 minutes
  7. Add the pepperoni and cook until the pepperoni is crispy

My convection oven is my best friend. Whenever I am making a dinner for just one or two I always use this over my full sized oven. Meals like Lazy Keto Chicken were designed for this thing, the hot air cooks stuff super fast and uses less energy.
Wusthof Tomato Knife
If you’ve been cutting your tomatoes with a regular knife, you’ve been doing it wrong! This baby has super sharp surrated blades that slice up a tomato with ease. An added bonus is the two pronged spears on the end of the knife for picking up the slices when you’re done!

Simple, cheap and tasty; the keto trifecta!  This dish is the ultimate in keto comfort food.  As you know, I’ve got a little bit of an obsession with finding the perfect keto-friendly pizza.  Most of the methods involve creating some sort of faux bread, whether it be almond bun based, or a pita.  Today’s pizza is even simpler, its just making a pizza on top of a chicken thigh!
Pounded Chicken PizzaAnd as you can see, it turned out amazing!

Chicken ThighsThis recipe starts with the humble, boneless chicken thigh. If you’re not aware, chicken thighs are the cheapest chicken meat and at BJs you can buy 6 of the above packs for less than $20.  Each pack has four thighs.
Chicken thighs ready for a poundingStart by taking a large cutting board and laying out the chicken breasts.
Pounding Chicken ThighsThen cover them with saran wrap and beat the crap out of them with a flat surface.  I used my 8″ Cast Iron Skillet as the bludgeoning tool. It was the perfect size as it wasn’t too heavy but still has enough surface area to crush the chicken. Pounded Chicken ThighsAfter they’ve been crushed, they really flattened out!  This serves two purposes, one it gives us more surface area for our pizza.  Secondly, it makes them an even thickness so they cook well.Searing Chicken ThighsSpeaking of cooking, the next step is to sear the chicken over high heat with some bacon grease. Salt and pepper both sides.  One minute per side should do. After they’ve seared, throw them in an oven at 350 degrees for 10 minutes.Frying BaconWhat would pizza be without bacon? My trusty bacon press keeps the bacon nice and flat during frying!Fried BaconMmmmm, bacon!Finished Chicken ThighsHere’s the chicken thighs after its trip to the oven.  10 minutes should do, although I did check them with a meat thermometer to make sure they were above 165 degrees just to be safe.Chicken thighs with marinara sauceNext, throw a low carb pasta / pizza sauce on top of them.  Then sprinkle with whatever pizzaesque spices you have laying around.  I used italian seasoning.Three Cheeses on chicken thighsNow for the cheese!  I had three types of shredded cheese in my fridge so I used all three.  This amounted to Cheddar, Monterey Jack and Jarlsberg (Swiss). After applying the cheese, switch the oven to Broil High and cook for 3 more minutes.

Melted cheese on pounded chicken pizzaAfter three minutes, the cheese is all melted and ready for the final toppings.Add BaconThrow that bacon on there!Add PepperoniAnd some pepperoni!Pounded Chicken PizzaHit it up for two more minutes and we have pizza perfection!  The cheese, bacon, pepperoni and chicken thighs make an awesome flavor profile.

  • ½ Cup Marinara / Pasta / Pizza Sauce
  • 2.5 Oz Cheddar Cheese, Shredded
  • 2.5 Oz Jarlsberg Cheese, Shredded
  • 1 Oz Monterey Cheese, Shredded
  • 4 Slices Bacon
  • 16 Slices Pepperoni
  • Italian Seasoning (Can substitute oregano, thyme, or whatever you have)
  • Salt and Pepper
Instructions
  1. Preheat oven to 350 degrees
  2. Start cooking the 4 slices of bacon
  3. Place chicken thighs on a large cutting board, cover with saran wrap, and pound with a heavy pan
  4. Salt and pepper both sides of the chicken
  5. Heat some grease / oil in a pan on high heat and sear chicken on both sides for one minute on each side
  6. Transfer the skillet to the oven and cook for 10 minutes
  7. Remove the skillet from the oven; add sauce and seasoning
  8. Cover with cheese and add back to the oven for 3 minutes, this time cooking on Broil
  9. Remove from oven, add remaining toppings of bacon and pepperoni, then broil for an additional 2 minutes.
Notes
I cooked 5 pieces of bacon but only used 4 for the pizzas.

Sometimes you just want a pizza. Domino’s and Pizza Hut is out but you can make your own using some low carb, flax based pitas! I’m normally against fake breads but it was Saturday afternoon at lunch and we had absolutely nothing to eat. Joseph’s Low Carb Pita’s have 4 net carbs per pita, and if you split them in half for one pizza you get 2 net carbs per pizza.

Pita BreadStart by taking a low carb pita and cutting it in half lengthwise and place them on a foil lined sheet.

Sauced Pita BreadSpread some sauce on the pita.  I used Rao’s Tomato Basil Sauce which is the lowest I’ve ever seen.  Its 3 net carbs per serving and pretty tasty.

Cheese up your pitaThe next step is cheese.  You can use any type you want but I went with cheddar because that’s what I had on hand.

Roasted Red PeppersFor toppings, the sky is the limit.  I had some roasted red peppers that come in a jar so I sliced some up and threw them on there.

Pita Pizza with PepperoniAdd some pepperoni.

Finished Pita PizzaAnd you’re all done!  These cook up super fast cause of the thin pita crust.

Pizza is a mainstay for people on the SAD (Standard American Diet).  Its fast, tasty, and horribly bad for you. Luckily, I’ve found a way to use the almond buns to create a perfect pizza crust.  I’ve made pizza like objects like the meatza in the past but its not the same as an actual slice. One time I even made pizza using almond buns but it was not quite family size. This time, I was able to reproduce an actual, full size pizza using almond buns.

Almond Bun Pizza SliceThe finished product looked just like a pizza slice!  I decided to make this one just cheese but obviously you could add any toppings you like.

Almond Bun Dry IngredientsThe first step is to make the crust. The recipe is the same as for the original almond buns except I have added oregano, thyme and garlic to flavor the crust.

Liquid Pizza BatterThe liquid batter should look like this.  Make sure that the eggs are warm and the butter is hot when you mix it.  You want the batter to be easy to spread.

Pizza Pan Start with a well greased 12″ pizza pan and preheat the oven to 350.

Pizza batter in panHere is the pizza crust in the pan.  If you use a larger pan than 12″, make sure to increase the recipe size.

Cooked CrustPrecook the crust until it starts to brown on the edges.  This should be around 7 minutes but since it is so thin, you could watch it after 5 minutes.

Pizza with sauceNext apply the pizza sauce.  I decided to make a white pizza and used Alfredo sauce. Pizza with cheeseNow add the cheese.

More CheeseAnd more cheese.

Cooked PizzaBroil the pizza for 2-3 minutes or until the cheese starts to bubble.

Sliced PizzaAnd there you have it! Cut up the pizza with a nonstick pizza wheel and you’re good to go.

  • 1.5 tsp Baking Powder

  • 122 g (1/2 Cup) Alfredo sauce
  • 4 oz Cheddar
  • 2 oz Jarhlsberg
  • 2 Eggs
Instructions
  1. Combine the dry ingredients and mix well
  2. Make sure the eggs are warm by placing them in hot water before use
  3. Add eggs to dry ingredients
  4. Melt butter then add to the mixture
  5. Spray pam on pizza pan and spread mixture to pizza pan
  6. Cook at 350 degrees for 7 minutes
  7. Apply Alfredo sauce to pizza
  8. Add cheese to pizza and any other toppings
  9. Broil for 2 minutes

Ever since I made the Almond Buns I knew there would be a ton of other uses. This week I decided to use the buns to make personal pizzas using the buns! Using individual buns is great for portion control and also allows each pizza to have its own set of toppings depending on what everyone wants!

Almond Bun Personal PizzaFor mine I put bits of bacon with cheddar and mozzarella cheese.

Making Almond BunsI made the dough the same as with the original almond buns except I added 1 tsp of Italian seasoning (oregano, thyme, basil and some other things) and grated some fresh Parmesan into the mix.  I didn’t mention it before, but you can personalize your almond buns by adding in spices to match what it is being used for.

Almond Buns ready to bakeHere is the mixture spread out into a muffin top pan. Since the original article, some people have also reported good results using egg forms if you have those handy.

Finished BunsHere are the completed buns.  Note, you can undercook them a little because you will be toasting them again for the pizza.  So I cooked them right until the edges started browning.

Pizza MakingHere is a picture of the progression of making the pizzas.  I use this pizza sauce I found called Casa Viso Pizza Sauce.  Its only 2 net carbs per 4 Tbsp (1/4 cup). This was by far the lowest of the ones I saw in the store.  I think I used less than that but in case you were looking for a brand to use.  Obviously if you pick a random one thats 9 net carbs this won’t be very keto friendly.

Bacon PizzasI added bacon.

Pepperoni PizzaMy wife made Pepperoni.  Another trick is to put a layer of pepperoni under the cheese and then you can put a different topping over the cheese, or more pepperoni.

Personal Almond Bun Pizzas CookingHere is a later version we made cooking.  The toothpicks really held the pepperoni together.  Without it, the pepperoni will slip off.  Also, if works better to flip the buns over and put the sauce and toppings on the flat side.  I cooked them in my convection toaster oven in order to save time and energy but it would work just as well in an oven.

  8. Bake / Toast / Broil for 3-5 minutes until toppings are crisp and cheese is melted.

This is a pretty common keto staple meal.  Its pretty easy to make and looks just like pizza, but its Meatza!

Meatza PiecesHere is the finished pieces!  You can put any toppings on it, I did just pepperoni and cheese.

Meat in cast iron skilletAny meat can be used, I used ground beef with a little seasoning in it.

Add Toppings to MeatzaCook the crust in the oven. It will shrink a decent amount but that’s ok! Spread some pizza sauce, cheese and pepperoni.
