Bacon Wrapped Eggs

In the past I’ve made runny eyed peppers which was a play on the traditional hole in a piece of bread with egg cooked in it.  Others have cooked eggs in the middle of onions and recently I encased an egg in sausage. The next logical direction was to add bacon!

Bacon wrapped EggHere I have created a bacon ring and filled it with gooey egg goodness and topped it with cheddar cheese. I was pleasantly surprised how well it turned out.

Cooking BaconThe first step is to fry some bacon in your trusty skillet. If you don’t have one, you definitely should, it is basically the only required item for keto kooking. I forgot to take a picture of the bacon cooking but try to make it as flat as possible.  Low and slow and with a bacon press makes the ideal bacon for this process.

Cutting out the cheeseThe next step is to take your cheese, I use Sargento cheddar slices, and cut them into a circle using the same egg ring we will use later. This just makes it look better and obviously you have to do this now because the egg ring will be in use later.

Bacon Egg RingHere is where the magic happens.  I couldn’t figure out how to do this before when I first had the idea.  However, once I got the egg rings the idea started to form. This tool is the real key to this recipe. You take the bacon and wrap it along the inside of the egg ring as shown.  Its important to cook the bacon relatively crisp but to do this process quickly. After a minute or so the bacon will be set and its too late to bend it into the mold.  I underestimated the amount of bacon so it only made one.  Sorry honey, life in the cave is rough!

Egg in bacon ringCrack an egg into the center of the bacon. The pan is obviously lined with bacon grease cause we just cooked the bacon in it.  I like to sprinkle some salt, pepper, onion powder and granulated garlic on my eggs but its totally personal preference.

Whole SpreadI didn’t want Mrs. Caveman to feel left out, so I cooked her a regular egg in a ring and some bacon on the side.  She likes her yolks broken, this is pretty easy to do as well, just mess it up with the spatula.

Ingredients
  • 1 Large Egg
  • 2 Slices thick cut bacon
  • 1 Slice Cheddar Cheese
  • To Taste Salt, Pepper, Onion Powder, Granulated Garlic
Instructions
  1. Cook two slices of bacon until almost crisp
  2. In the same plan, place an egg ring and quickly put the bacon in the ring around the inside edge
  3. Crack an egg into the center of the ring, cook to desired yolk consistency
  4. Place a piece of cheese on top of the egg and let melt
