Getting enough greens is always an issue. Even though keto is heavy on the fat and protein, you still need your vegetables! So what’s the best way to prepare vegetables? Drench them in fat and bacon of course!
Here is the finished dish and let me tell you, it tastes amazing! This possibly replaces creamy cheesy spinach as my favorite side.
Start with fresh brussels sprouts, then cut off the bottom and finally quarter. Feel free to keep the extra leaves that fall off in the process as well.
Once you’ve quartered all of the brussels sprouts, throw them in a large prep bowl.
Next mix in 1/4 of a cup of bacon grease into the mix. You do have a bacon grease keeper, don’t you? As you can see I’ve almost filled mine, its sad but its a pretty big accomplishment 🙂 If you don’t have bacon grease, just use olive oil.
At this point, also add the fish sauce and pepper. No salt is needed since the fish sauce and the bacon grease is already pretty laden with sodium. Note that the fish sauce smells rank but I promise it tastes good after cooking.
Of course it wouldn’t be a keto side without bacon! For really flat, evenly cooked bacon, use a bacon press.
Once the bacon is done, cut it into small slices and mix in with the brussels sprouts. Cook for 40 minutes at 450, stirring every 10 minutes. Then broil for 2 minutes to brown the sprouts if needed.
Here are the Bacon Brussels Sprouts with some jerk chicken and cole slaw.

- 24 Oz Brussels Sprouts
- ¼ Cup Fish Sauce
- ¼ Cup Bacon Grease ( Can subsitute any oil)
- 6 Strips Bacon (Optional)
- To Taste Pepper
- De-stem and quarter brussels sprouts
- Mix the brussels sprouts with the bacon grease and fish sauce
- Cook bacon and cut into small strips
- Add bacon into mix along with pepper and stir
- Spread brussels sprouts on a greased pan
- Cook at 450 degrees for 40 minutes, stirring every 10 minutes
- Finish off the brussels sprouts on broil for a few minutes

Its a store bought item, you can find it in the asian aisle in most grocery stores!

I am not sure there is a substitute. It should be in the asian section of the grocery store.

You can buy Fish Sauce at Asian markets in any big city. I’ve bought a non-MSG kind. I’m wondering if 40 minutes is too long a cook time.
I took a shot at these; they taste great but the cook time (450deg for 40 min) is way too long in my case. By 20 minutes I had partial charcoal; what wasn’t charred was amazing though.
Same here. Think it would be better to only cook the bacon half to three quarters of the way, as it continues to cook once it is in the oven and just burns up. Next time I will par cook the bacon and stir every 10 mins until lightly brown, disregarding total cooking time.
I love this recipe! I’ve made it four or five times now. The first time I tried this it was a bit salty for me which I think was due to the fish sauce my store had. I’ve now upped the brussel sprouts to 32 oz and bacon grease to 1/3 cup but reduced the fish sauce to 1/8 cup (approximately since my liquid measuring cup starts at 1/4 so I do about half of that) and now it’s perfect for me. I’ve also found I don’t tend to need the full 40 min at 450 for my oven. I’ve turned it down a smidge to 440 and take it out around 35 min when it’s starting to crisp all over (I like the burnt crispy bits).
This recipe looks delicious and we are making it tonight. However, I just wanted to point out that your calorie counts are way off.
6 oz raw brussels sprouts are about 73 calories, per calorieking.com and several other nutrition resources. Bacon grease is 456 calories per 1/4 cup. Fish sauce (Squid brand — easiest to find generally) is 36 calories per 1/4th cup.
So even if you trimmed away a quarter of your starting weight in sprouts and ended up with 18 oz trimmed, you are still looking at 178 calories per serving (12 carbs, 5 fiber, 13 fat, 7 protein).
If you start out with 24 oz trimmed, the calories are more like 196 per serving (16 Carbs, 6 fiber, 13 fat, and 8 protein).
As an extreme example, if you trim away half of your brussels sprouts, and start with 12 oz after trimming, the calorie count is still 160, granted much closer. (8 carbs, 4 fiber, 13 fat, 5 protein)

re the bacon: no need for a press, heres the ultimate way to cook bacon. stays flat , straight, crisped and you dont need to babysit it.
preheat oven to 400f. line a baking pan with with parchment paper. i use a pan with high sides so as
to make clean up a breeze.
lay your bacon slices in a the pan and bake at 400 for 15 minutes. just set your timer and go do something!
thats it! thats all! bacon is perfectly cooked, flat and crisp
remove bacon and tilt pan into your bacon grease container . i let the pan then sit until parchment is
congealed. put in gargbage and give your sheet a quick clean.
